Gose with raspberries 3.5%ABV 8°P

Gose is a style of beer popular in Leipzig. It is based on wheat beer. What was going on with it that didn't quite comply with the German Beer Purity Law? Fermentation. This beer is specially infected with lactic acid. This resulted in a mildly sour taste in the final product. Thanks to the sodium-rich water of Leipzig, there was also a slight saltiness in the beer.
In Gose Sakiškės, we brewed using the natural lactic acid bacteria living on the malt. We used a little salt to produce a light saltiness. And where did the raspberries come from? Why not. To give more expression to this historic style, we added lots of frozen raspberry berries to the fermentation. The result is a raspberry-scented sour ale with a moderate saltiness on the dry finish.
